This was the first time that I used a premade mix instead of using my own blend, and I won’t go back. Not only is this the best tasting summer sausage I’ve had, I don’t think that you could purchase your own spices and cure separately without spending more.As a matter of fact, every one of the AC Leggs sausage blends I’ve tried has been excellent. There’s really no need to mix your own. Just follow the directions on the package. I usually go all pork shoulder or 70/30 pork shoulder to lean venison trimmings by weight.Delicious!

Great sausage
Best seasoning available for making regular morning sausage. Lots of folks still butcher in our area. This is the go to sausage seasoning for most of them.

Everyone loves it!
I've used this seasoning for the past few years when making beef or venison summer sausage. Everyone loves it and says it's better then anything you can get in a store.

Tastes great....easy to use!
We've used this twice now and love it! We have used it with 25 pounds of nicely trimmed venison both times. We didn't add any fat so the sausage doesn't turn out greasy at all. Most recently we did add 1ounce of dried jalapenos with lots of seeds, high temp cheddar, and some smoke flavored powder according to the directions on the flavoring bag. This combo adds flavor and a little kick but not too much for my wife. We've had rave reviews from all who have tried this sausage. As for cooking we took advice from the Bearded Butchers on YouTube. We smoked it with apple wood at 165 for two hours then 185 for two hours then 205 until they temped at 155.We do have a good grinder as well as a mixer and stuffer. The grinder is several years old from Cabelas. The mixer and stuffer are both from Hakka and were bought through Amazon. We are very glad to have all three pieces of gear. If you are on the fence about buying a mixer or stuffer know that making sausage without them would be much more of a chore.
