Quickly becoming one of my favorite cookbooks!
My husband was raised in an Italian household and we have many recipes that we prepare from his childhood. When I paged through this cookbook, I thought it would be a great addition to our Italian recipe collection. This cookbook is quickly becoming one of my favorites.The “Triple Cheese Baked Vegetable Macaroni” is one of the best non-traditional Mac & Cheese recipes I’ve made. The combination of zucchini, peas, and fresh basil with fontina, mozzarella, parmesan, and macaroni noodles was simply amazing.The “Arugula and Parmesan Salad” was so simple to make and rivals a salad that my husband and I order at one of our favorite family owned Italian restaurants. We used a high quality parmesan which brought this salad to another level.“Perfect Pomodoro Sauce with Capellini” is just as the name describes, “Perfect”! This was a great weeknight choice, very quick to prepare. This recipe reminded my husband of a dish he would prepare with his mother. Following a trick he learned from her, he chopped the tomatoes in large chunks and cooked them covered for a bit longer than the recipe stated. The juices from the fresh tomatoes along with the garlic made a wonderful sauce. We used fresh capellini which only required 1 minute of cooking time. After adding the butter we cooked the capellini directly in the pan. This sauce was “Perfect”!My husband and I are looking forward to trying many more recipes.

Fantastic selection of recipes
I love italian food and wanted to explore more vegetarian Italian cooking as transitioning to a more vegetarian diet. I have tried a few of the recipes so far and they are all delicious. What I like about them is that the ingredients are not overly complicated or hard to come by and steps are easy to follow. They also list substitutes for vegan diets.Its great to explore new ways to incorporate tofu into dishes in the place of cream etc so they are also great if you love pasta but balancing with some healthier ingredients. I also loved to explore new ways to cook tempeh - the carbonara with tempeh is fantastic!So glad I discovered this book! I have found some new staple recipes now!

Savory, wholesome, and delish!
This review is a long time coming as I purchased the book awhile ago but I have been digging into it more these days as a focus on plant-based diet has become increasingly important to my family for health and the environment. The other night we made the tofu ricotta for the eggplant rollatini (although we were lazy and just layered like lasgana instead) and it was SO good. My mother-in-law who I consider to be a culinary whiz and also not a big fan of tofu was thoroughly impressed as was my husband and twin toddlers who licked their spoons clean each bite. What I loved about the book is that it provides a lot of versatile recipes (tomato sauce, ricotta tofu, etc.) that can be used in a variety of the more complex(although very approachable) recipes or you can blend them with some of your own Italian-family recipes to give them a plant-based punch! Excited to continue working my way through each page! Also I love the author's blog/website, Delish Knowledge, so many more great dishes with a wider variety of cuisines.

Absolutely LOVE this cookbook
Absolutely LOVE this cookbook! It's a perfect compilation of Italian vegetarian dishes that are easy to make, easy to follow and add super flavor. I've been searching for a cookbook that had healthy ways to prepare Italian pasta dishes and this hits the spot. It's also great because it gives Vegan options for many of the recipes. My husband loves his meat dishes but since we've been using these recipes, he is pleasantly satisfied with the vegetarian options because of the flavor and they are filling but healthy. It's also great because I feel comfortable feeding my 1 year old twins these healthy vegetable and pasta dishes instead of always making them separate dishes. We feel a spike of energy after these amazing dishes.Thanks for changing our way of life with all these healthy options. Sincerely, the Milavickas family!

I absolutely love this cookbook
I absolutely love this cookbook! Alexandra does an excellent job making vegetarian recipes that non-vegetarians can get down with. She incorporates a large variety of fresh ingredients and vegetables in her dishes making them delicious and nutritious at the same time. We have been eating a lot more Italian food around this house since buying this book. She has a good number of recipes with short prep time that are perfect for weeknight dinners and some that taste even better when eaten as leftovers. This has become my go to cookbook for prepping lunches for the upcoming work week without breaking the bank.

best cookbook ever!!!
This is the best cookbook ever. I have quite the collection and nothing compares to this. I never write reviews, but felt compelled for this book. I have been cooking my way through this and every single recipe has been a "make this one again." You could open an excellent restaurant from this book. Plus many of the recipes are not too time consuming and can be made during the week. This should be in every kitchen, vegetarian or not. You will not be disappointed.
